Refreshing cucumber salad three ways - Food on Shine
I really like the "asian" cuke salad here. I usually don't have mirin so I sub in some tamari or a little fish sauce or a splash of sesame oil. I sometimes leave out the sesame seeds. I sometimes use thai chilis (the best!)

I like the trick of pulling out the pulp after it is barely cooked and cooking down the juices separately to intensify the flavor and prevent a runny sauce. Thick sauce but still with that fresh tomato taste!
